Phenolic and saponin profile in grains of carioca beans during storage

The objective of this study was to evaluate the behavior slow and fast-darkening carioca beans during storage, profile phenolics saponins, aiming identify which compounds may be involved in browning process integument these grains. Cultivars Madreperola Dama presented lowest total color difference (ΔE) highest luminosity (L*) values storage time indicating slow-darkening cultivars. In contrast, cultivars Notavel Imperador rapidly darkened with time, evidenced by ΔE L*. Regarding content phenolic it observed a reduction for free maintenance/increase beans. PCA profile, were similar, differing from Madreperola, that grains have similar profile. OPLS/DA indicated aged bright had more kaempferol than darker For higher Soyasaponin Bd, might related darkening process. Besides, found at concentrations can chemical marker
